Here’s What You Should Eat at the World’s Best Restaurant

Italy’s Osteria Francescana is “officially” the world’s best restaurant.

That’s according to British magazine, Restaurant, which published its 14th annual rankings of the best eateries on the planet on Tuesday, based on votes from about 1,000 leaders in the culinary community.

Headed by world-famous chef Massimo Bottura, three-Michelin-star Osteria Francescana has consistently been in the list’s top five since 2010, but this is its first year to take the crown.

If you’re wondering what dishes it takes to become the No. 1 restaurant in the world, here’s a look at Osteria Francescana’s menu:

With a look that plays on the Big Apple moniker, Bottura blended seasonal ingredients with a broth for a dish named “Autumn in New York.”

A favorite, “An Eel Swimming up the Po River” includes the fish alongside polenta, Campanie apple jelly, and burnt saba onion, with charcoal salt.

For a dish called “Fish soup” (which doesn’t look much like soup at all), Bottura took mussel and clam puree, and topped it with cooked fish, and shellfish. To complete the creation, the chef plated seaweed crackers.

Perhaps one of Bottura’s most stunning plates, “Beautiful, Psychedelic Spin-painted Veal, Not Flame Grilled,” is a cut of veal, cooked slowly, and served with pureed roasted potato, sour cherry, and a liquified mix of parsley, abrotanum and mugwort, alongside a balsamic drizzle. The dish pays homage to artist Damien Hirst.

To polish off a meal, Bottura deconstructed a lemon dessert and called it, “Oops! I Dropped the Lemon Tart,” in a nod to artist Ai WeiWei:
